Nature has spoken once again — and in 2025, it did so with generosity. After months of patient work among centuries-old olive trees, Masseria Salamina proudly presents its new Extra-Virgin Olive Oil 2025/2026, now available worldwide through our online shop.
A harvest that marks a true renaissance for Puglia, combining abundance, balance, and exceptional quality, ready to travel from our land straight to your table.
A Remarkable Harvest Year for Puglia
The 2025 olive oil campaign in Puglia will be remembered as a year of renewal. Production across the region increased by nearly 40% compared to 2024, approaching the record levels of 2023.
Warm, well-balanced summers, timely rainfall, and a naturally reduced presence of olive fly allowed olives to grow healthy and expressive. In Fasano and the wider Brindisi area, oils from the new harvest are described as fresh, gentle, and harmonious — a perfect balance between structure and elegance. Thanks to advanced irrigation systems and careful agricultural planning, Masseria Salamina faced no losses from drought or extreme weather, preserving both quantity and, above all, quality.

Why Extra-Virgin Olive Oil from Puglia is so Special
Puglia is Italy’s olive oil heartland. Here, olive trees are not crops — they are monuments. Generations of farmers have shaped a landscape where agriculture, culture, and identity are inseparable.
The region’s oils are celebrated for their aromatic complexity, nutritional richness, and strong territorial character, shaped by sun, wind, limestone soils, and centuries of human knowledge. From robust reds of the land, Puglia produces olive oils that are equally expressive — intense yet balanced, powerful yet refined.
Fasano: Where Geography Becomes Flavor
What makes Masseria Salamina’s oil truly unique is its place of origin. Our olive groves stretch across more than 60 hectares of olive trees between Fasano, Monopoli, and Putignano, including 25 hectares inside the Regional Park of the Coastal Dunes. Here, centuries-old trees grow between the Adriatic Sea and the inland hills, absorbing sea breezes, mineral soils, and Mediterranean light.
Wide planting distances allow trees to breathe, gather energy, and mature naturally. The result is an oil that carries marine freshness, herbal depth, and remarkable balance — a true expression of land shaped by nature and time.

Our Extra-Virgin Olive Oils: Four Expressions of Identity
All our oils are produced exclusively through mechanical extraction, using native Apulian varieties such as Ogliarola, Leccino, Frantoio, and Coratina, harvested at optimal veraison to ensure low acidity and outstanding organoleptic properties. Each bottle of Masseria Salamina olive oil tells a different story of terroir, harvest moment, and tradition.
Il Fiore
The very first oil of the season, produced from early-veraison olives as Leccino. Fresh, vibrant, and aromatic, Il Fiore captures the most delicate and expressive side of the harvest.
Parco Tompagno
Born inside the Coastal Dunes Regional Park, this oil is ideal as a finishing touch. Elegant and intense, it enhances dishes with a refined, unmistakable character.
Quattrocento
From olive trees planted over 400 years ago. This oil is our history in liquid form — structured, deep with sensation of almond, and rich with the memory of generations who shaped this land.
Apluvia
From the Latin “without rain”, a tribute to resilience. Intense, and rich in flavour but never aggressive, Apluvia transforms scarcity into strength, delivering structure and bold personality to every dish.
Farming, Biodiversity, and Respect for the Land
At Masseria Salamina, olive oil is part of a larger agricultural vision. Alongside oil, we produce jams, preserves, wine grapes, durum wheat, vegetables, fruit, almonds, and a natural cosmetics line — all guided by biodiversity preservation and energy sustainability.
From biomass heating systems using olive pruning waste to solar integration and natural pool purification, sustainability is not a trend for us — it is a responsibility inherited from the land itself.
